Friday Food Love! ~ Balsamic Baked Tilapia with Bell Peppers & Bleu Cheese

"Tilapia fillets are topped with onions, colorful bell peppers and crumbled blue cheese."

Ingredients
1 tablespoon olive oil
1 yellow onion, halved and sliced
1 red bell pepper, chopped
1 yellow bell pepper, chopped
1 orange bell pepper, chopped
1 green bell pepper, chopped
2 tablespoons balsamic vinegar
Dill to taste
Paprika to taste
Garlic powder to taste
salt and pepper to taste
4 (8 ounce) fillets tilapia fillets
4 teaspoons olive oil
1 cup crumbled blue cheese

Preparation
Preheat an oven to 350 degrees F (175 degrees C).
Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Cook onion and all bell peppers in the oil until onion is tender and golden, and peppers are slightly soft, about 10 minutes. Stir balsamic vinegar into the vegetables; season with salt and pepper.
Rub tilapia filets with 2 teaspoons olive oil and a sprinkle of garlic, dill, paprika, salt and pepper on both sides. Place fillets in a small baking dish, and top with the balsamic onion mixture. Sprinkle fish evenly with blue cheese.

Bake in preheated oven until fish flakes easily. Serve atop salad greens, rice or alone.

Friday Food Love! ~ Barbecue Chicken Sandwiches

This one is so easy it doesn't even take a full page. Found it on Real Simple, my favorite magazine!! For those whole LOVE their crock pot or pressure cooker, look for the alternate version below

Sandwiches

Ingredients
1 - 3 1/2- to 4-pound rotisserie chicken, meat shredded (about 5 cups)
1 to 1 1/2 cups barbecue sauce
1/4 cup pickled jalapeƱos, roughly chopped (optional)
4 hamburger buns
potato chips (optional)


Preparation
In a bowl, combine the chicken, barbecue sauce, and jalapeƱos (if using).
Divide the mixture evenly among the bottoms of the buns and sandwich with the tops. Serve with the potato chips (if using).


Crock Pot Version

Ingredients

4 frozen chicken breast
Bottle of fav BBQ sauce
Half an Onion
2 tablespoons of Balsamic Vinegar
1/2 cup brown sugar

Preparation

Throw it all in the crock pot, use enough BBQ sauce to cover the chicken. Set it on high for four hours or low for eight.

Serve on bread, rolls or plain... YUMMY!

Friday Food Love! ~ Baked Feta Crusted Salmon

Found this one on Food Network, love the tart feta cheese against the buttery salmon! YUM!
No pic for this one, so I just used a beautiful piece of Wild Salmon...

Ingredients
3 to 5 sprigs fresh thyme
4 (7 to 8-ounce) wild salmon fillets
4 tablespoons extra-virgin olive oil
1/2 lemon, juiced
Freshly ground black pepper
8 ounces feta cheese
6 ounces white wine


Preparation
Preheat the oven to 375 degrees F.
In a small baking dish arrange the sprigs of thyme along the bottom.
Wash the fillets and dry them with paper towels. Rub the fish with the extra-virgin olive oil and the lemon juice, and then season with black pepper, to taste.
Arrange the fillets in the baking dish on top of the thyme. Next, break up the feta and sprinkle on top of the salmon. Add the white wine to the dish and bake for 20 minutes. Remove the fish from the oven and serve.

Friday Food Love! ~ Crock Pot Cream Cheese Chicken



I LOVE my slow cooker / crock pot and this is a super-easy dish for a night when you have a little extra time. Chicken is savory and so yummy all by itself as the sauce and delish! Shown in the picture with regular noodles, I prefer egg noodles.

Ingredients
3 lbs chicken pieces
1 (2/3 ounce) package Italian salad dressing mix
4 tablespoons melted butter (divided)
1 small onion, chopped
1 garlic clove, chopped
1 (10 1/2 ounce) can cream of chicken soup
8 ounces cream cheese
1⁄2 cup chicken broth

Preparation
Place chicken pieces in crock pot and sprinkle Italian seasoning over chicken. Sprinkle with 2 tablespoons melted butter.
Cook on low for 4-6 hours.
Melt 2 tablespoons butter in a saucepan and sautƩ onion and garlic. Add Cream of Chicken Soup, cream cheese, and chicken broth. Stir until smooth.
Add this mixture to crock pot and cook on low for an additional hour.

I served this with some wide egg noodles and broccoli! Yummy!

Friday Food Love! ~ Crockpot Chicken & Dumplings

Comfort food is my weakness, I totally admit it. The Carbs are just so yummy and warm and WOW ~ So easy the meal is evil....


Ingredients

4 boneless skinless chicken breasts
2 cans of cream of chicken soup
1 can of chicken broth
1 small onion, chopped
2 tablespoons of butter
1 can of biscuit dough

Preparation

In your crockpot, add all the ingredients except the biscuit dough. Make sure the chicken breasts are covered with the liquid. Cook on low for 6-8 hours. Once finished, shred the chicken with a fork or potato masher. Turn the heat up to high and add pinches of biscuit dough to the crockpot. Stir, cover, and let cook on high for an additional 45 minutes. Serve!

Friday Food Love - Stouffer's Seasoning Wraps!

As we all know I am not a chef, or even a good cook. I do my best with the limited knowledge and money available and I make it work pretty good. Chicken is cheap and versatile, and my kids are sick of it. Yes, they are done. 

I have been granted a small reprieve when I discovered the Stouffer’s Seasoning Wraps. They are cheap, easy and Amy-Proof (aka idiot proof).

Defrost your Chicken (or use fresh)
Pound it flat-ish (see how chef -like I am in my terminology)
Put the chicken within the seasoning wrap
Put it in a pan (non-stick or reg I have used both)
Cook each side for 5-6 minutes (depends on your stove)
Take out of the wrapper. 
Put on a plate with something healthy like broccoli, garden salad, French fries, potato chips, fried pickles…. (just wanted to see if you were paying attention)

Viola! Dinner!

You can find Stouffer’s Seasoning Wraps in the gravy / mix aisle.

Friday Food Love ~ Slow Cooker Sticky Chicken Wings

So my son says to me, Mom make some chicken wings for dinner. I took the challenge foind a recipe and they were YUMMY~
Served with Sticky Rice and coleslaw.

Ingredients
3 pounds chicken wings
2 tablespoons cornstarch
1 tablespoon sesame seeds
2 tablespoons chopped fresh cilantro leaves
For the sauce
1/3 cup reduced sodium soy sauce
1/3 cup balsamic vinegar
1/3 cup brown sugar, packed
1/4 cup honey
3 cloves garlic, minced
1 teaspoon Sriracha, or more, to taste
1 teaspoon ginger powder
1 teaspoon ground pepper
1/2 teaspoon onion powder

Directions:
In a large bowl, whisk together soy sauce, balsamic vinegar, brown sugar, honey, garlic, Sriracha, ginger powder, pepper and onion powder.   

Place wings into a slow cooker. Stir in soy sauce mixture and gently toss to combine. Cover and cook on low heat for 3-4 hours or high heat for 1-2 hours. 

In a small bowl, whisk together cornstarch and 2 tablespoons water. Stir in mixture into the slow cooker. Cover and cook on high heat for an additional 10-15 minutes, or until the sauce has thickened.   

Preheat oven to broil. Line a baking sheet with foil.  Place wings onto the prepared baking sheet and broil for 2-3 minutes, or until caramelized and slightly charred.  Serve immediately with remaining sauce, garnished with sesame seeds and cilantro, if desired.
